Let me be straight about this before you scroll further. Air-fried har cheong gai is not identical to deep-fried har cheong gai. Deep frying puts the wing in 180C oil on every surface at once, and nothing replicates that exactly.
What you get instead is about 90 percent of the crunch, considerably more of the prawn paste flavour surviving because it is not leaching into a litre of oil, and no pan of used oil to deal with on a weeknight. For me that trade is worth making four times out of five.
What you need
- 800g chicken mid-joint wings, patted very dry
- 2 tbsp fermented prawn paste (nam yue style har cheong, the jarred grey-pink kind)
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1 egg, beaten
- 2 cloves garlic, grated
- Half tsp white pepper
- 4 tbsp potato starch or cornflour
- 2 tbsp plain flour
- Neutral oil in a spray bottle
Method
- Whisk the prawn paste, wine, sugar, egg, garlic and pepper together. Taste it. It should be aggressively salty, because the wings will dilute it.
- Coat the wings, cover, and refrigerate for at least four hours. Overnight is better. This is a marinade that needs time to get past the skin.
- Mix the potato starch and plain flour in a bowl. Lift each wing out of the marinade, let the excess drip off, then press it into the flour mix on all sides. Shake off what does not stick.
- Leave the coated wings on a rack for 10 minutes. The coating goes from powdery to slightly tacky as it hydrates, and tacky is what crisps. Skipping this is why air-fried coatings come out chalky.
- Spray both sides lightly with oil. Lightly. Dry patches stay white and floury.
- Air fry at 200C for 18 to 22 minutes, arranged in a single layer with space between each wing. Turn them at the halfway mark unless your oven has a basket that removes the need.
- Rest two minutes, then eat. They soften noticeably after ten.

Air fry is a fan oven running fast air at high temperature, usually with a perforated tray so hot air reaches the underside too. The perforation is the part that matters. On a solid baking tray the bottom of the wing sits in its own rendered fat and steams.

Close, not identical. The crust is thinner and slightly less even, because dry air cannot reach every surface the way oil does. The prawn paste flavour comes through stronger, and cleanup is a tray instead of a pot of oil. If you are serving it to people who order this at a zi char stall weekly, they will notice. Most people will not.
Why did my coating come out white and powdery?
Not enough oil, or you skipped the 10 minute rest after coating. Starch needs a little moisture and a little fat to turn glassy. Spray lightly on both sides and let the coated wings sit until the surface looks damp rather than dusty.
Potato starch or cornflour?
Potato starch gives a lighter, more shattery crust and browns faster. Cornflour is sturdier and holds up better if the wings will sit for a while before serving. The mix of starch and a little plain flour is a compromise that works for both.

Yes. Fan-forced at 200C on a perforated tray or a wire rack over a baking tray gets you most of the way. A dedicated air fry setting typically runs the fan harder, which shortens the cook and improves the crust a little.

On a flat tray, yes. On a basket or perforated accessory designed to let air circulate underneath, often not. Every door opening costs you cavity temperature, so avoid it where the design allows.
