Undermount sits beneath the worktop so you can sweep crumbs straight in and there is no rim to trap grime. It needs a worktop that can take it, which in practice means stone or solid surface rather than laminate. Top mount drops in from above with a visible rim and works on almost any worktop, including a replacement into an existing hole.

Double suits anyone who washes by hand and wants a rinsing side, or who cooks and cleans at the same time. Single gives you one large usable space, which matters if you wash wok pans or oven trays that simply do not fit in half a sink. If you have a dishwasher, single is usually the better buy.

It differs by model and by mounting type, and undermount in particular needs the fabricator to cut and polish to the sink's template. Every listing publishes the dimensions. Give them to your stone supplier before the worktop is cut, not after.

Stainless steel is the practical default: cheap to replace, takes abuse, shows water marks. Granite composite hides marks better and is quieter under running water, but chips if you drop something heavy on the edge. Both are fine. Neither is indestructible.
